A strange confluence of events today: we discovered a rotten potato at the bottom of the potato bag in our cupboard– the first time in 15 years that this has happened to this potato-loving family– and a Facebook friend asked for recommendations for quick and cheap mashed potato replacements. Which made me realise that we’ve completely changed our potato habit with one very quick simple recipe. So I thought I’d post it here for your entertainment.
Cannellini Mash
In a pot, combine 2 drained cans of cannellini beans, 3 crushed cloves of garlic, and a generous squirt of lime juice. Heat the mixture, constantly stirring, until the beans begin to break down. Add some more lime juice to taste, and thoroughly mash. Then serve.
This recipe takes less than 5 minutes, and serves the four of us as a reasonable side dish– the flavour is more intense that normal mashed potatoes, which means we do with less, and it’s perfectly filling.
